Eunice Grace Lyngaas was born April 7, 1918 in Rothsay, MN, to Otto and Effie      (Aaberg) Olson. She was baptized at Our Savior Lutheran Church in Rothsay. When she was five years old she moved with her family to Maplewood, MN and was confirmed at Pelican Valley Lutheran Church. Eunice has been an obedient servant to the Lord and a hard worker. She was also an obedient wife. She married Clifford Erickson on December 28, 1935. They had three children, Jerome Wendell, Audrey Fay, and JoAnn Phyllis. After they separated, she owned and operated several soft serve ice cream restaurants; the last one in Breckenridge, MN, where she met and later married Leon Lyngaas. They made their home on a farm east of Doran, MN. Together they had a son, James Leon. They built a very prosperous business and were blessed with rich land, good weather and produced many Quality! bumper crops. They enjoyed their lake home on the north end of Battle Lake and their winter home on the south end of Texas.

Eunice was always the rock of the family, strong in many ways; surviving cancer twice. She was an active member of her church circle, quilting and serving meals, and just last Christmas helped package treats and gifts for our troops in Iraq.
