Edith Beaudin

Edith Marie Beaudin, 71 of Rural Kent, MN passed away November 18, 2010 under Hospice care and surrounded by her family. The visitation is Sunday, November 21 from 4-7 pm with a prayer service at 7 pm at St. Thomas Catholic Church of Kent, MN and one hour prior to the funeral service. The funeral is Monday, November 22 at 2:00 pm at St. Thomas Catholic Church of Kent, MN. Officiating is Father Kenneth Popp. Interment is at St. Thomas Catholic Cemetery, Kent. Pallbearers are Michael Ernst, Clayton Ernst, Cody Ernst, Dana Ernst, Robert Plath and Aaron Stenerson. Honorary Pallbearers are all of her nieces and nephews and all who called her friend.
Edith was born on March12, 1939 at the family home in Moorhead, MN to Arnold and Hilda (Bontjes) Ernst. Soon after, they moved to Wolverton, MN. Edith attended and graduated from Wolverton High School. She was a gold star member of Deerhorn 4-H where she participated in sewing, livestock, and cooking.
After graduation, she attended Moorhead Teacher's College and then Interstate Business College. She married Norman "Dennis" Beaudin on August 30, 1958. They made their first home in rural Wolverton-moving several times since, including Moorhead, Fargo, Park Rapids, Nevis, Wolverton, and their last home in rural Kent.
Being a woman of diversified interests, Edith held many different positions. She was the City Clerk for Wolverton, and also worked in two restaurants in Wolverton-including Victoria's. She then worked for the Clay Wilkin Opportunity Council as their Coordinator on Aging for several years. Most recently, she was an advocate for Someplace Safe Crisis Center in Breckenridge, Browns Valley, and Wheaton. She was very passionate about her work there.
Edith was also a woman of many interests around her home. In addition to the loving environment she created for her two children, Michelle and James, she was an avid gardener and took much pleasure in cooking and baking. Guests were always welcomed with a special treat or a new recipe she just had to try but she was most famous for her doughnuts. She was gifted in cake decorating-adorning many wedding cakes over the years. Edith enjoyed crocheting, sewing, quilting and canning and received much joy in giving them as gifts. She and Dennis were foster parents to many children and Barb Mellen of Minneapolis remained especially close to them.
Edith will be remembered as a woman who was not afraid to try anything. She lived a full life with no regrets. She held her family, especially her grandchildren in high esteem. She will be deeply missed.
Edith is survived by her husband of 52 years, Norman "Dennis" Beaudin; her daughter Michelle Nicklay (Jody Saatoff) of Fargo, ND; her son James (Lisa) Beaudin of Northwood, ND; her grandchildren Brennen, Preston, and Carson Beaudin; her brothers, Edward (Mary Jean) Ernst of Wolverton, Errol Ernst of Dent, MN; and Eugene (Tammy) Ernst of Barnesville, MN; her sisters, Evonne (Ken) Dykema of Bismarck, ND; Eileen (James) Plath of Barnesville, MN and Emy (Jay) Stenerson of Sabin, MN; and many nieces and nephews
Edith is preceded by her parents Arnold and Hilda (Bontjes) Ernst; her brothers Ervin and Eldean
